Gluten-Free Popovers
Ingredients
2
cups
Bob’s Red Mill Gluten-Free 1 to 1 Baking Flour
½
teaspoon
xanthan gum
1
teaspoon
salt
6
large eggs
2
cups
whole milk
6
tablespoons
olive oil
Instructions
Preheat oven to 375 degrees Fahrenheit.
Spray a popover pan with nonstick cooking spray and set aside.
In a medium mixing bowl, whisk together flour, xanthan gum, and salt until well blended.
In a blender, combine eggs, milk, and oil until well blended.
Add ½ of dry ingredients to the blender and blend well. Add remaining dry ingredients and blend on high speed until batter is smooth.
Fill each popover pan 4/5ths full.
Bake for 55 minutes or until popovers are very puffed and golden brown.
Remove the baked popovers from the pan. Re-spray the pan and continue to bake off remaining batter.
