Gluten-Free Popovers
Ingredients
- 2 cups Bob’s Red Mill Gluten-Free 1 to 1 Baking Flour
- ½ teaspoon xanthan gum
- 1 teaspoon salt
- 6 large eggs
- 2 cups whole milk
- 6 tablespoons olive oil
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Spray a popover pan with nonstick cooking spray and set aside.
- In a medium mixing bowl, whisk together flour, xanthan gum, and salt until well blended.
- In a blender, combine eggs, milk, and oil until well blended.
- Add ½ of dry ingredients to the blender and blend well. Add remaining dry ingredients and blend on high speed until batter is smooth.
- Fill each popover pan 4/5ths full.
- Bake for 55 minutes or until popovers are very puffed and golden brown.
- Remove the baked popovers from the pan. Re-spray the pan and continue to bake off remaining batter.
