Gluten-Free Popovers


  • 2 cups Bob’s Red Mill Gluten-Free 1 to 1 Baking Flour
  • ½ teaspoon xanthan gum
  • 1 teaspoon salt
  • 6 large eggs
  • 2 cups whole milk
  • 6 tablespoons olive oil


  • Preheat oven to 375 degrees Fahrenheit.
  • Spray a popover pan with nonstick cooking spray and set aside.
  • In a medium mixing bowl, whisk together flour, xanthan gum, and salt until well blended.
  • In a blender, combine eggs, milk, and oil until well blended.
  • Add ½ of dry ingredients to the blender and blend well. Add remaining dry ingredients and blend on high speed until batter is smooth.
  • Fill each popover pan 4/5ths full.
  • Bake for 55 minutes or until popovers are very puffed and golden brown.
  • Remove the baked popovers from the pan. Re-spray the pan and continue to bake off remaining batter.


Makes approximately 8 popovers
