2Granny Smith apples,peeled and cut into ¼-1/2 inch dice
Instructions
In a medium-sized heavy saucepan, heat 2-3 inches of vegetable oil to 350 degrees Fahrenheit. Have a sheet pan lined with paper towels for draining and a plate with confectioner’s sugar for dredging on the side.
In a medium mixing bowl, whisk together flour, cornstarch, sugar, baking powder, apple pie spice, and salt until well blended.
In another larger bowl, whisk eggs, milk, oil, and extract until well blended.
Whisk the dry ingredients into the wet ingredients until just combined.
Using a rubber spatula, fold the apples into the batter.
Using a small ice cream scoop, scoop batter and carefully place into hot oil. Do not crowd the pan.
Allow fritters to fry for 2 to 2 ½ minutes or until golden brown and a test fritter cut in half is cooked through.
Drain fritters onto the paper towel-lined sheet pan.
Dredge each fritter into the confectioner’s sugar and serve.
