Apple Fritters

Ingredients

  • Vegetable oil for frying
  • Confectioner’s sugar for dredging
  • 1 ¾ cups all-purpose flour
  • ¼ cup cornstarch
  • ½ cup granulated sugar
  • 2 ¼ teaspoons baking powder
  • 1 ½ teaspoons apple pie spice
  • 1 teaspoon salt
  • 2 large eggs
  • ¾ cup whole milk
  • 1 tablespoon vegetable oil
  • 2 teaspoons pure vanilla extract
  • 2 Granny Smith apples, peeled and cut into ¼-1/2 inch dice

Instructions

  • In a medium-sized heavy saucepan, heat 2-3 inches of vegetable oil to 350 degrees Fahrenheit. Have a sheet pan lined with paper towels for draining and a plate with confectioner’s sugar for dredging on the side.
  • In a medium mixing bowl, whisk together flour, cornstarch, sugar, baking powder, apple pie spice, and salt until well blended.
  • In another larger bowl, whisk eggs, milk, oil, and extract until well blended.
  • Whisk the dry ingredients into the wet ingredients until just combined.
  • Using a rubber spatula, fold the apples into the batter.
  • Using a small ice cream scoop, scoop batter and carefully place into hot oil. Do not crowd the pan.
  • Allow fritters to fry for 2 to 2 ½ minutes or until golden brown and a test fritter cut in half is cooked through.
  • Drain fritters onto the paper towel-lined sheet pan.
  • Dredge each fritter into the confectioner’s sugar and serve.
