Apple Fritters
Ingredients
- Vegetable oil for frying
- Confectioner’s sugar for dredging
- 1 ¾ cups all-purpose flour
- ¼ cup cornstarch
- ½ cup granulated sugar
- 2 ¼ teaspoons baking powder
- 1 ½ teaspoons apple pie spice
- 1 teaspoon salt
- 2 large eggs
- ¾ cup whole milk
- 1 tablespoon vegetable oil
- 2 teaspoons pure vanilla extract
- 2 Granny Smith apples, peeled and cut into ¼-1/2 inch dice
Instructions
- In a medium-sized heavy saucepan, heat 2-3 inches of vegetable oil to 350 degrees Fahrenheit. Have a sheet pan lined with paper towels for draining and a plate with confectioner’s sugar for dredging on the side.
- In a medium mixing bowl, whisk together flour, cornstarch, sugar, baking powder, apple pie spice, and salt until well blended.
- In another larger bowl, whisk eggs, milk, oil, and extract until well blended.
- Whisk the dry ingredients into the wet ingredients until just combined.
- Using a rubber spatula, fold the apples into the batter.
- Using a small ice cream scoop, scoop batter and carefully place into hot oil. Do not crowd the pan.
- Allow fritters to fry for 2 to 2 ½ minutes or until golden brown and a test fritter cut in half is cooked through.
- Drain fritters onto the paper towel-lined sheet pan.
- Dredge each fritter into the confectioner’s sugar and serve.
