Preheat oven to 350° F. In the bowl of an electric mixer, using the paddle attachment, mix all the ingredients on medium speed. A dough should form. Form the dough into a disk and wrap it in plastic wrap. Chill dough for 30 minutes.

Using moistened hands, measure 1 tablespoon of dough for each cookie and roll into balls.

Arrange balls on 2 ungreased baking sheets, spacing 2 inches apart.

Using a fork, make crisscross marks on each cookie. Re-shape each cookie if they crumble and fall apart a bit.

Bake cookies for 12 minutes or until puffed and brown.

Allow cookies to cool. They will firm up as they cool.

Drizzle melted chocolate or melted candy melts over each cookie, if desired.

Allow chocolate or candy melts to harden.

Wrap cookies in an airtight container.
