½cupall-purpose flour
1cupgranulated sugar
2tablespoonslemon juice
2teaspoonspure vanilla extract
Streusel Topping
2 2/3cupsall-purpose flour
1cupdark brown sugar,packed
1tablespoonground cinnamon
2sticks(8 ounces) unsalted cold butter, cut into ½ inch cubes
Instructions
Make Peach Filling
Preheat oven to 400° Fahrenheit.
In a large bowl, combine all filling ingredients. Blend well. Pour into a 13 x 9” rectangular baking pan that has been sprayed with nonstick cooking spray.
Make Streusel Topping
In another large bowl, whisk together or blend with your fingers, flour, brown sugar and cinnamon until well combined.
Using a pastry blender, cut cubed butter into dry ingredients until mixture looks like small peas.
Scatter a thick layer of streusel evenly over filling. Any extra streusel can be placed onto a foil lined sheet pan and baked at 400 degrees Fahrenheit for approximately 10-15 minutes or until nice and brown. Serve over fruit, cake or ice cream.
Bake the Peach Crisp
Bake crisp for 20-25 minutes or until nice and brown and filling looks bubbly.
