Peach Streusel Skillet Cobbler
Ingredients

firm, ripe peaches
cut into small 3/4 inch thick pieces

fresh lemon juice

granulated sugar
Streusel
½
cup
all-purpose flour
¼
cup
dark brown sugar
packed
¾
teaspoon
ground cinnamon

tablespoons
unsalted butter cut into small cubes
Confectioners’ sugar for dusting
Instructions
Make the Cobbler
Preheat oven to 350° Fahrenheit.
In a large bowl, whisk together the all-purpose flour, baking powder, granulated sugar and salt.
Add the whole milk into the dry ingredients and, using a rubber spatula, mix until well combined. Do not overmix.
Over medium high heat on the stove, melt the butter In a 10 inch cast iron skillet.
In a medium bowl, mix the peaches, lemon juice and granulated sugar and set aside.
Scrape batter into hot skillet and spread as evenly as possible using an offset spatula.
Scatter peaches and lemon juice mixture over batter.
Make the Streusel
In a small bowl whisk the ½ cup of all-purpose flour, dark brown sugar, and cinnamon until well blended.
Add the butter pieces, and using your fingers, crumble the butter into the dry ingredients until clumps form.
Assembly
Sprinkle streusel topping over peaches and batter.
Bake for 45-50 minutes until nice and brown.
Dust with confectioners’ sugar, if desired.
Serve warm with vanilla ice cream.
