Peach Streusel Skillet Cobbler
Ingredients
Cobbler
- 1 cup all-purpose flour
- 1 ½ teaspoons baking powder
- 2/3 cup granulated sugar
- ¾ teaspoon salt
- ½ cup whole milk
- 1 stick unsalted butter (½ cup )
- 2 cups firm, ripe peaches cut into small 3/4 inch thick pieces
- 1 tablespoon fresh lemon juice
- 2 teaspoons granulated sugar
Streusel
- ½ cup all-purpose flour
- ¼ cup dark brown sugar packed
- ¾ teaspoon ground cinnamon
- 4 tablespoons unsalted butter cut into small cubes
- Confectioners’ sugar for dusting
Instructions
Make the Cobbler
- Preheat oven to 350° Fahrenheit.
- In a large bowl, whisk together the all-purpose flour, baking powder, granulated sugar and salt.
- Add the whole milk into the dry ingredients and, using a rubber spatula, mix until well combined. Do not overmix.
- Over medium high heat on the stove, melt the butter In a 10 inch cast iron skillet.
- In a medium bowl, mix the peaches, lemon juice and granulated sugar and set aside.
- Scrape batter into hot skillet and spread as evenly as possible using an offset spatula.
- Scatter peaches and lemon juice mixture over batter.
Make the Streusel
- In a small bowl whisk the ½ cup of all-purpose flour, dark brown sugar, and cinnamon until well blended.
- Add the butter pieces, and using your fingers, crumble the butter into the dry ingredients until clumps form.
Assembly
- Sprinkle streusel topping over peaches and batter.
- Bake for 45-50 minutes until nice and brown.
- Dust with confectioners’ sugar, if desired.
- Serve warm with vanilla ice cream.
