Peach Streusel Skillet Cobbler

Ingredients

Cobbler

  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • 2/3 cup granulated sugar
  • ¾ teaspoon salt
  • ½ cup whole milk
  • 1 stick unsalted butter (½ cup )
  • 2 cups firm, ripe peaches cut into small 3/4 inch thick pieces
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons granulated sugar

Streusel

  • ½ cup all-purpose flour
  • ¼ cup dark brown sugar packed
  • ¾ teaspoon ground cinnamon
  • 4 tablespoons unsalted butter cut into small cubes
  • Confectioners’ sugar for dusting

Instructions

Make the Cobbler

  • Preheat oven to 350° Fahrenheit.
  • In a large bowl, whisk together the all-purpose flour, baking powder, granulated sugar and salt.
  • Add the whole milk into the dry ingredients and, using a rubber spatula, mix until well combined. Do not overmix.
  • Over medium high heat on the stove, melt the butter In a 10 inch cast iron skillet.
  • In a medium bowl, mix the peaches, lemon juice and granulated sugar and set aside.
  • Scrape batter into hot skillet and spread as evenly as possible using an offset spatula.
  • Scatter peaches and lemon juice mixture over batter.

Make the Streusel

  • In a small bowl whisk the ½ cup of all-purpose flour, dark brown sugar, and cinnamon until well blended.
  • Add the butter pieces, and using your fingers, crumble the butter into the dry ingredients until clumps form.

Assembly

  • Sprinkle streusel topping over peaches and batter.
  • Bake for 45-50 minutes until nice and brown.
  • Dust with confectioners’ sugar, if desired.
  • Serve warm with vanilla ice cream.
