Strawberry Lemon Crumble Bars
Ingredients
Crust

all-purpose flour

cup
granulated sugar

baking powder

½ cup unsalted butter, cold and cut into ½ inch cubes

egg
Filling
2
cups
fresh strawberries,
washed, hold and cut into ½ inch pieces
1
tablespoon
fresh lemon juice
Zest from 1 lemon
1
teaspoon
vanilla
¼
cup
sugar
1
tablespoon
cornstarch
Instructions
Make the Crust
Preheat oven to 375° Fahrenheit.
Whisk together the flour, sugar, baking powder and salt.
Using a pastry blender, cut in the unsalted butter until butter becomes the size of small peas.
Add the egg and mix together until a nice crumble is formed.
Press half of the mixture into a 9 inch square baking pan sprayed with cooking spray and lined with parchment.
Make the Filling
Mix together the fresh strawberries, lemon juice, lemon zest, vanilla, sugar, and cornstarch.
Assembly
Pour filling into crust.
Sprinkle reserved crumble over the filing.
Bake 35-45 minutes or until top is nice and brown.
Chill and cut into bars.
