Strawberry Lemon Crumble Bars
Ingredients
- Crust
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 8 tablespoons ½ cup unsalted butter, cold and cut into ½ inch cubes
- 1 egg
- Filling
- 2 cups fresh strawberries, washed, hold and cut into ½ inch pieces
- 1 tablespoon fresh lemon juice
- Zest from 1 lemon
- 1 teaspoon vanilla
- ¼ cup sugar
- 1 tablespoon cornstarch
Instructions
- Make the Crust
- Preheat oven to 375° Fahrenheit.
- Whisk together the flour, sugar, baking powder and salt.
- Using a pastry blender, cut in the unsalted butter until butter becomes the size of small peas.
- Add the egg and mix together until a nice crumble is formed.
- Press half of the mixture into a 9 inch square baking pan sprayed with cooking spray and lined with parchment.
- Make the Filling
- Mix together the fresh strawberries, lemon juice, lemon zest, vanilla, sugar, and cornstarch.
- Assembly
- Pour filling into crust.
- Sprinkle reserved crumble over the filing.
- Bake 35-45 minutes or until top is nice and brown.
- Chill and cut into bars.
