Strawberry Lemon Crumble Bars

Ingredients

  • Crust
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 8 tablespoons ½ cup unsalted butter, cold and cut into ½ inch cubes
  • 1 egg
  • Filling
  • 2 cups fresh strawberries, washed, hold and cut into ½ inch pieces
  • 1 tablespoon fresh lemon juice
  • Zest from 1 lemon
  • 1 teaspoon vanilla
  • ¼ cup sugar
  • 1 tablespoon cornstarch

Instructions

  • Make the Crust
  • Preheat oven to 375° Fahrenheit.
  • Whisk together the flour, sugar, baking powder and salt.
  • Using a pastry blender, cut in the unsalted butter until butter becomes the size of small peas.
  • Add the egg and mix together until a nice crumble is formed.
  • Press half of the mixture into a 9 inch square baking pan sprayed with cooking spray and lined with parchment.
  • Make the Filling
  • Mix together the fresh strawberries, lemon juice, lemon zest, vanilla, sugar, and cornstarch.
  • Assembly
  • Pour filling into crust.
  • Sprinkle reserved crumble over the filing.
  • Bake 35-45 minutes or until top is nice and brown.
  • Chill and cut into bars.
