Giant Celebration Chocolate Chip Cookie

Ingredients

  • 1 ¼ cups all-purpose flour
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 stick +2 tablespoons (10 tablespoons) unsalted butter, softened
  • ½ cup +2 tablespoons dark brown sugar packed
  • ¼ cup +2 tablespoons granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups semisweet chocolate chips
  • ½ cup white chocolate chips
  • Flaky sea salt for sprinkling if desired

Instructions

  • Preheat oven to 350° Fahrenheit.
  • Spray a 10 inch springform pan with nonstick cooking spray.
  • In a large mixing bowl whisk together the flour, cornstarch, salt, baking powder and baking soda. Set aside.
  • In the bowl of an electric mixer the paddle attachment, cream the butter and both sugars on medium speed until light and fluffy.
  • Add the egg and vanilla and blend well.
  • On low speed, mix in the dry ingredients until well blended.
  • Remove the bowl from the motor and fold in both types of chips using a rubber spatula.
  • Place the batter into the prepared pan and press down until evenly distributed.
  • Sprinkle lightly with flaky sea salt.
  • Bake the cookie for 23-25 minutes or until lightly browned.
  • Cool in pan.
  • Remove cookie from the pan and place on a serving plate.
  • Fill a pastry bag fitted with a large star tip ½ full of icing.
  • Decorate the cookie as you desire.
