Palmiers

  • ½ cup granulated sugar for sprinkling on work surface and dough

Instructions

  • On a sugared work surface, roll out the dough to a 12 by 10 inch rectangle.
  • With the long side facing you, sprinkle some of the sugar over the dough, and fold the two long sides in to meet in the center. Press down gently to adhere.
  • Sprinkle some more sugar on top, and now fold the shorter sides in to meet at the center, again pressing down gently to adhere.
  • Fold the dough in half as if you are closing a book.
  • Sprinkle more sugar over the dough on both sides.
  • Wrap the dough tightly in plastic wrap and chill it in the refrigerator for one hour, or until it is firm enough to slice. The dough can be frozen for 20-30 minutes to firm up more quickly.
  • Preheat oven to 400° F.
  • Using a sharp knife, slice the dough into 1/8 inch thick slices, and place them cut side up, 2 inches apart, on two parchment lined sheet pans.
  • Sprinkle the top of each palmier with sugar.
  • Bake for 10 to 12 minutes, or until light brown and crisp. They will crisp up as they cool.
