Easy Strawberry Buttercream Frosting

Ingredients

  • 3 sticks unsalted butter, softened
  • 3 cups confectioners’ sugar, sifted if lumpy
  • 1 cup strawberry preserves, stirred well
  • 1-2 tablespoons heavy cream, only if needed

Instructions

  • In the bowl of an electric mixer using the paddle attachment, cream the butter on medium-high speed until light and fluffy.
  • Slowly add confectioners’ sugar and blend well.
  • On low speed, add preserves and blend until creamy.
  • If the frosting is too stiff, add 1-2 tablespoons heavy cream. Blend until creamy and of spreading consistency.
  • Use immediately or refrigerate in a covered container.

Notes

Makes enough to frost 2 8-inch or 9-inch layers or enough to fill 1 dozen cupcakes with some leftover
