Holiday Gluten Free Peanut Butter Cookies

Ingredients

  • 1 cup smooth peanut butter
  • 1 cup dark brown sugar packed
  • 1 large egg
  • 1 teaspoon baking soda
  • ½ teaspoons vanilla extract
  • Melted chocolate or different colored candy melts to drizzle over the top of the cookies

Instructions

  • Preheat oven to 350° F. In the bowl of an electric mixer, using the paddle attachment, mix all the ingredients on medium speed. A dough should form. Form the dough into a disk and wrap it in plastic wrap. Chill dough for 30 minutes.
  • Using moistened hands, measure 1 tablespoon of dough for each cookie and roll into balls.
  • Arrange balls on 2 ungreased baking sheets, spacing 2 inches apart.
  • Using a fork, make crisscross marks on each cookie. Re-shape each cookie if they crumble and fall apart a bit.
  • Bake cookies for 12 minutes or until puffed and brown.
  • Allow cookies to cool. They will firm up as they cool.
  • Drizzle melted chocolate or melted candy melts over each cookie, if desired.
  • Allow chocolate or candy melts to harden.
  • Wrap cookies in an airtight container.
