Holiday Gluten Free Peanut Butter Cookies
Ingredients
- 1 cup smooth peanut butter
- 1 cup dark brown sugar packed
- 1 large egg
- 1 teaspoon baking soda
- ½ teaspoons vanilla extract
- Melted chocolate or different colored candy melts to drizzle over the top of the cookies
Instructions
- Preheat oven to 350° F. In the bowl of an electric mixer, using the paddle attachment, mix all the ingredients on medium speed. A dough should form. Form the dough into a disk and wrap it in plastic wrap. Chill dough for 30 minutes.
- Using moistened hands, measure 1 tablespoon of dough for each cookie and roll into balls.
- Arrange balls on 2 ungreased baking sheets, spacing 2 inches apart.
- Using a fork, make crisscross marks on each cookie. Re-shape each cookie if they crumble and fall apart a bit.
- Bake cookies for 12 minutes or until puffed and brown.
- Allow cookies to cool. They will firm up as they cool.
- Drizzle melted chocolate or melted candy melts over each cookie, if desired.
- Allow chocolate or candy melts to harden.
- Wrap cookies in an airtight container.
