Honey Cake


  • 1 ½ cups all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 2 large eggs
  • ¼ cup plus 2 tablespoons granulated sugar
  • ¼ cup plus 2 tablespoons packed light brown sugar
  • 3 tablespoons vegetable oil
  • ¾ cup honey
  • Zest from one orange
  • Zest from one lemon
  • ¾ cup strong brewed coffee
  • Sliced almonds for decorating


  • Preheat oven to 300 degrees Fahrenheit. Spray a 9-by-5-by-3 inch loaf pan with nonstick cooking spray and set aside.
  • In a mixing bowl, mix together flour, baking powder, baking soda, and spices. Set aside.
  • In a large mixing bowl, whisk together eggs and both sugars for approximately 2 minutes or until mixture is thick.
  • Add the oil, honey, zests, and coffee to the sugar and egg mixture, and blend well.
  • Add the dry ingredients to the wet ingredients and blend well using a rubber spatula. Whisk briefly if lumps form.
  • Pour batter into prepared loaf pan and bake for approximately 1 hour and 22 minutes, or until a small sharp knife inserted into the center comes out clean.
  • Cool and remove from pan.


Makes 1 9-by-5-by-3 inch loaf cake
