Honey Cake
Ingredients
- 1 ½ cups all purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground allspice
- 1/8 teaspoon ground cloves
- 2 large eggs
- ¼ cup plus 2 tablespoons granulated sugar
- ¼ cup plus 2 tablespoons packed light brown sugar
- 3 tablespoons vegetable oil
- ¾ cup honey
- Zest from one orange
- Zest from one lemon
- ¾ cup strong brewed coffee
- Sliced almonds for decorating
Instructions
- Preheat oven to 300 degrees Fahrenheit. Spray a 9-by-5-by-3 inch loaf pan with nonstick cooking spray and set aside.
- In a mixing bowl, mix together flour, baking powder, baking soda, and spices. Set aside.
- In a large mixing bowl, whisk together eggs and both sugars for approximately 2 minutes or until mixture is thick.
- Add the oil, honey, zests, and coffee to the sugar and egg mixture, and blend well.
- Add the dry ingredients to the wet ingredients and blend well using a rubber spatula. Whisk briefly if lumps form.
- Pour batter into prepared loaf pan and bake for approximately 1 hour and 22 minutes, or until a small sharp knife inserted into the center comes out clean.
- Cool and remove from pan.
