Peach Crisp

Ingredients

  • Peach Filling
  • 10 cups approximately 10 peaches, unpeeled and sliced
  • ½ cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons pure vanilla extract
  • Streusel Topping
  • 2 2/3 cups all-purpose flour
  • 1 cup dark brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 2 sticks (8 ounces) unsalted cold butter, cut into ½ inch cubes

Instructions

  • Make Peach Filling
  • Preheat oven to 400° Fahrenheit.
  • In a large bowl, combine all filling ingredients. Blend well. Pour into a 13 x 9” rectangular baking pan that has been sprayed with nonstick cooking spray.
  • Make Streusel Topping
  • In another large bowl, whisk together or blend with your fingers, flour, brown sugar and cinnamon until well combined.
  • Using a pastry blender, cut cubed butter into dry ingredients until mixture looks like small peas.
  • Scatter a thick layer of streusel evenly over filling. Any extra streusel can be placed onto a foil lined sheet pan and baked at 400 degrees Fahrenheit for approximately 10-15 minutes or until nice and brown. Serve over fruit, cake or ice cream.
  • Bake the Peach Crisp
  • Bake crisp for 20-25 minutes or until nice and brown and filling looks bubbly.
  • Serve crisp with vanilla ice cream.
