Peach Crisp
Ingredients
- Peach Filling
- 10 cups approximately 10 peaches, unpeeled and sliced
- ½ cup all-purpose flour
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 2 teaspoons pure vanilla extract
- Streusel Topping
- 2 2/3 cups all-purpose flour
- 1 cup dark brown sugar, packed
- 1 tablespoon ground cinnamon
- 2 sticks (8 ounces) unsalted cold butter, cut into ½ inch cubes
Instructions
- Make Peach Filling
- Preheat oven to 400° Fahrenheit.
- In a large bowl, combine all filling ingredients. Blend well. Pour into a 13 x 9” rectangular baking pan that has been sprayed with nonstick cooking spray.
- Make Streusel Topping
- In another large bowl, whisk together or blend with your fingers, flour, brown sugar and cinnamon until well combined.
- Using a pastry blender, cut cubed butter into dry ingredients until mixture looks like small peas.
- Scatter a thick layer of streusel evenly over filling. Any extra streusel can be placed onto a foil lined sheet pan and baked at 400 degrees Fahrenheit for approximately 10-15 minutes or until nice and brown. Serve over fruit, cake or ice cream.
- Bake the Peach Crisp
- Bake crisp for 20-25 minutes or until nice and brown and filling looks bubbly.
- Serve crisp with vanilla ice cream.
